Baked Sweet Potato Fries

This simple recipe is a healthier take on deep-fried, fast food french fries. Serve alongside burgers, sandwiches or wraps. Also makes a great snack at your next party (though you'll want to double, triple, etc. the recipe for that!)

Baked Sweet Potato Fries

Yields: 2 large servings or 4 small servings

INGREDIENTS

  • 2 Sweet Potatoes

  • 1 tbsp Coconut Oil (melted)

  • Sea Salt

  • Other Spices (optional- e.g. Paprika, smoked paprika, onion powder, garlic powder, cayenne pepper, chili powder, ground black pepper)

DIRECTIONS

  1. Pre-heat oven to 450 degrees

  2. Prepare sweet potatoes one of two ways: (1) Peel and sliced into thin fries or (2) Unpeeled (make sure you wash/scrub it well and then dry) and sliced into thick wedges - Make the slices as equal size as you can to ensure even cooking time

  3. Place cut sweet potatoes and coconut oil in large bowl and toss (Note: amount of oil may vary depending on size of the potatoes...use as much as you need to ensure all pieces are coated, roughly 1-2 tsp per potato). Alternatively, place sweet potatoes and coconut oil in a container, cover, and give them a good shake (this is how I prefer to do it...it's more fun!)

  4. Sprinkle sea salt and optional spices onto sweet potatoes and toss or shake again

  5. Place seasoned sweet potatoes on 1-2 baking sheets (optional to place parchment paper on top) - do NOT overlap the fries!

  6. Bake for 15 minutes

  7. Remove from oven, flip each fry, return to oven for another 15 minutes

  8. Remove from oven and let cool for a couple minutes

  9. Add more seasoning if necessary

  10. Serve immediately
