Breakfast Egg + Avocado Toast
Yields: 1 serving
- 1 slice gluten-free bread
- 1 egg
- 1/2 small avocado (or 1/4 large avocado)
- Sea salt & pepper (to taste)
- Toast the bread (if you don't have a toaster like me, broil about 1 min on each side)
- While bread is toasting, mash up the avocado in a small bowl
- Fry or scramble the egg (cook in fat of your choice, e.g. ghee, grass-fed butter, coconut oil)
- Assemble: Spread avocado on toast and top with the egg. Add salt & pepper. For added flavor: try paprika, red pepper flakes, chili powder, basil, or curry powder. Enjoy!
