Easy Roasted Brussels Sprouts

This is one of my favorite side dishes to serve in the fall and winter. Why? It's delicious and simple.


Easy Roasted Brussels Sprouts


  • Brussels Sprouts
  • Coconut Oil


  1. Preheat the oven to 400 degrees
  2. Cut off the ends of the Brussels sprouts, remove their outer leaves, and slice in half length-wise
  3. Drizzle with melted coconut oil until well covered (typically 1-3 tbsp depending on how many brussels sprouts you make), and sprinkle with salt & pepper - To ensure even coverage, toss ingredients together in a bowl or put them in a container with a lid and give 'em a little shake
  4. Spread Brussels sprouts on a baking sheet in a single layer
  5. Roast in the oven for 35-40 minutes at 400 degrees until golden brown
