Mint Chocolate Chip Cookie Dough

The serving size may be small, but this recipe packs a minty punch!

Yields 1/3 cup dough


  • 1/2 cup Raw Cashews
  • 1/2 tsp Unsweetened Almond Milk
  • 1/4 tsp Peppermint Extract
  • Sea Salt (to taste)
  • 1/8 cup Chocolate Chips (This brand is my favorite because it's gluten-free, dairy-free, soy-free)


  1. Combine all ingredients (except chocolate chips) in a food processor and process until smooth
  2. Transfer mixture to a medium bowl and mix in the chocolate chips
  3. Roll dough into balls (approx 1 tsp) or flatten into cookies, or transfer to a dish and flatten so they're brownie/fudge-like
  4. Freeze for at least 20 minutes or put in the fridge for at least 1 hour before serving
