Green Eggs (Popeye Approved)

Bored with your usual eggs? Put a colorful spin on them while boosting its nutritional profile. Your kids will love it and it'll make for a great new addition to your next St. Patrick's Day menu :)


Green Eggs (Popeye Approved)

Yields: 2 servings


  • 2 eggs
  • 1 cup spinach
  • 1/8 cup coconut milk (optional, makes them fluffier)
  • 1 1/2 tsp coconut oil
  • Sea salt (to taste)
  • Black pepper (to taste)


  1. Combine eggs, spinach, coconut milk, sea salt, and black pepper in a blender or food processor. Blend until you can't see any more pieces of spinach.
  2. Heat coconut oil on a skillet until it melts.
  3. Pour egg mixture in skillet and cover. Cook on medium heat until mixture firms enough to flip.
  4. Flip until fully cooked.
  5. Serve and enjoy!

Serve with avocado, sauerkraut, vegetables, or any of your favorite egg pairings. For a cute and punny dish, serve with yams ("Green Eggs and Yam!")
