Green Eggs (Popeye Approved)
Yields: 2 servings
- 2 eggs
- 1 cup spinach
- 1/8 cup coconut milk (optional, makes them fluffier)
- 1 1/2 tsp coconut oil
- Sea salt (to taste)
- Black pepper (to taste)
- Combine eggs, spinach, coconut milk, sea salt, and black pepper in a blender or food processor. Blend until you can't see any more pieces of spinach.
- Heat coconut oil on a skillet until it melts.
- Pour egg mixture in skillet and cover. Cook on medium heat until mixture firms enough to flip.
- Flip until fully cooked.
- Serve and enjoy!
Serve with avocado, sauerkraut, vegetables, or any of your favorite egg pairings. For a cute and punny dish, serve with yams ("Green Eggs and Yam!")
