Roasted Sweet Potatoes

Add some sweetness to your plate with this popular, crowd-pleasing side dish. It's one of my personal favorite recipes and might become one of yours too! Make a bigger batch so you have leftovers (these taste great the next day, hot or cold!)

Roasted Sweet Potatoes

Yields: 2 servings


  • 1 sweet potato (feel free to leave the skin on if organic, otherwise peel it)
  • Coconut oil (melted)
  • Dash Sea salt and pepper
  • Ground Cinnamon (optional)


  1. Pre-heat oven to 400F degrees
  2. Cut sweet potato into medium-sized pieces (make them as close to the same size as possible to ensure even cooking)
  3. Combine all ingredients in a medium bowl and mix well until sweet potato is fully coated with oil and spices
  4. Spread sweet potatoes onto a baking sheet or baking dish in a single layer
  5. Bake for 30-40 minutes or until tender
  6. Serve and enjoy!
