What to do when I'm hungry but out of food? I looked through my pantry and freezer and came up with this delicious concoction. I love adding Vitamin A rich pumpkin to anything and was thrilled when this combination of flavors hit the spot!
- 6-8 oz unsweetened almond milk
- 1/2 c organic pumpkin (canned)
- 1/4 frozen banana
- Stevia (to taste)
- Cinnamon (to taste)
- Pumpkin pie spice (lots!)
- Optional: add a handful of leafy greens to boost the nutrient content.
Put ingredients in blender and blend until smooth. If you don't have a frozen banana, use a fresh one and add ice (or pour smoothie over ice) as this tastes best when cold.
