I was telling her about how I bought the pre-cooked, ready-to-eat Steamed Lentils from Trader Joe's and didn't know what the heck to do with them. "Emily, you have GOT to try the Lentil Bruschetta Dip. It's a thing now. It's gone viral."
This tastes great on vegetables, rice, quinoa, gluten-free pasta, and oatmeal
You can even use it as a filling in wraps, sandwiches, tacos, burritos, enchiladas, and quesadillas
These little bite size snacks make for great appetizers. Guaranteed to be a big hit at your next dinner party or potluck! You can also try the Spicy Bean Filling on its own as a tasty dip for sliced veggies or crackers.

I personally think this tastes even better than the real deal! Unlike traditional tuna fish salad, this version uses protein-rich Greek Yogurt instead of mayonnaise. I went to the store today to pick up some tahini to make Sweet Potato Hummus, but they were sold out :-( I left the store empty-handed, but when I got home, I remembered that I had a mason jar full of sesame seeds in my pantry so I decided to make my own tahini. Problem solved!
I think my days of buying store-bought almond butter are over. Most almond butters I see in the store contain added oils and sugar, neither of which I'm a huge fan of. This morning I whipped up my own batch and all I used were almonds (and just a pinch of sea salt).
If you don’t like raw onions, feel free to leave them out. The recipe still tastes great without it! I like to serve this with thickly sliced cucumbers, carrot sticks, and celery.

Today I'm sharing my boyfriend's signature guacamole! It's his favorite dish to make for parties and potlucks. His secret ingredient (missing from the photo below) is the serrano pepper which adds both flavor and heat.
