Breakfasts
If you’ve been following me on Instagram, you may have noticed that I've posted some pictures of my weekly Veggie Egg Bake (which I make every Sunday night to enjoy Monday thru Friday).
A lot of these kinds of egg recipes I see floating around the internet are super skimpy when it comes to veggies...we're talkin' 75% eggs, 25% veggies. We can do better than that!
If you want a satisfying meal, this is one of the easiest recipes EVER. It contains the perfect mix of healthy fat, protein, and comfort carbs to keep your stomach & taste buds satisfied.
While I am in a place where I could live without bread, every once in a while a sandwich sounds really good to me.
Last weekend I ran a half marathon and that night I was totally craving a sandwich.
Specifically, a salmon avocado sandwich. What can I say? I was craving salt, carbs, and fat!
Today I'll be sharing some healthy breakfast recipes with you that are gluten-free, dairy-free, sugar-free, and cleanse-friendly.
I know that making the time to prep food can be a challenge, so I've picked 5 breakfast options that are quick and easy to accommodate your busy schedule.
Do you love bananas? Do you love healthy desserts? Do you love easy recipes? Do you love portable snacks?
If you answered Heck YES! to any or all of these, keep reading. You'll love these Oatmeal Banana Bars!
This Chocolate Peppermint Protein Green Smoothie is delicious! It reminds me of Girl Scout Thin Mint cookies or mint chocolate chip ice cream. Within minutes of drinking it, I had an instant energy boost (from the cacao). Enjoy for breakfast, as a snack, or even as a dessert.
If you don't want to spend a lot of time prepping your food in the mornings or if you're looking for an easy way to eat more vegetables, this recipe is for you! These veggie egg muffins are super awesome because you can pretty much use any veggies you have lying around your kitchen. Just chop them nice and small or shred them.
Make a batch on Sunday and enjoy throughout the week. They last at least 3-5 days.
Hey Chocolate Lovers! I created this recipe especially for you. The protein and chia seeds will keep you satiated all morning while the cacao, banana, berries, and greens will provide you with plenty of nutrients and the energy boost you need to start your day off on the right track.
This recipe is gluten-free, dairy-free, sugar-free, AND won't make you feel bloated afterward. You can eat it for breakfast or dessert and still feel fantastic.
I love smoothies.
They're a convenient way to consume a boat load of nutrients without making the body work too hard to absorb and digest them. Plus, they taste great! Unfortunately, not all smoothies are created equal which is why I typically don't drink smoothies unless I've made them myself.
A lot of smoothies you can order from restaurants and cafes are ridiculously high in sugar, either from too much fruit, fruit juice, or the addition of sherbet or frozen yogurt.
Yields 3 small pancakes or 1 mega pancake
Ingredients
1/4 cup banana, mashed (approximately 1 medium banana)
1 egg
1 tbsp coconut flour
1/4 tsp vanilla
2 shakes cinnamon
1 tbsp coconut oil (for cooking)
Last week I did a triathlon and instead of devouring the pizza, bagels, muffins and beer at the finish line, I opted to make this recovery smoothie when I got home. I just threw together whatever I had in my apartment and it turned out deee-licious so I wanted to share it with you.
This new smoothie I came up with is low in sugar, high in protein, rich in antioxidants and will boost your metabolism, lower your cholesterol and improve your immune system. It's mild in flavor, but oh so healthy! Give it a try!
Your ticket to a sweet, hearty, satisfying breakfast that will easily hold you over til lunch time has arrived. It tastes like homemade blueberry pie...mmm mmm MMM!
My cousin, Debbie, made this green smoothie for her adorable 3 and 5 year old girls and they thought it was delicious! They loved the fact that it looked like grass and appropriately named it the "Front Lawn" :) I had to see what all the hype was about so I made it myself and my oh my...this smoothie is a tasty one!
Low in sugar, gluten-free, easy to make and satisfies that need for something bread-y and carb-y without causing your insulin levels to spike off the charts or waistline to expand. It's worth noting that these are not the fluffy pancakes you're used to. They are fairly dense, but makes for a filling breakfast or snack with a higher protein and healthy fat profile than your typical pancake.
This is my "go-to" sugar-free dessert when I'm craving something after dinner that will satisfy me without derailing my healthy eating efforts. When I was a kid, I had a Chia Head (true story) but it wasn't until decades later that I learned that the same chia seeds that grew massive amounts of "hair" on my Chia Head were also nutritional powerhouses
Bored with your usual eggs? Put a colorful spin on them while boosting its nutritional profile. Your kids will love it and it'll make for a great new addition to your next St. Patrick's Day menu :)
This is what I've been eating frequently these last couple of weeks and it keeps me full for HOURS. It all started with my discovery of Ancient Harvest Quinoa Flakes during a search at the health food store for a "fast food" dinner one rushed evening. My breakfast quinoa bowl is now one of my new go-to "fast & easy" snack/meal staples and provides me with the perfect opportunity to enjoy all of my favorite toppings in one bowl. See that gooey clump of deliciousness melting in the center? Ooh baby. That, my friend, is sunflower seed butter. Incredible.

Since I've had hard-boiled eggs on my mind, today I'm going show you how I cook them so you can make them too!
Why? Because they're a super easy, make-ahead snack and a convenient way to add protein to any meal. Plus they're relatively inexpensive.
There are a bunch of different techniques out there, but this is the one I like the best.
